- 6 egg whites
- 1/3 C plus 1 T sugar
- 1 3/4 C almond meal
- 2 1/3 C powdered sugar, sifted
- 6 T chilled butter
- 1/2 C almond paste
- 1/4 C jam
Instructions
- Whisk egg whites until they start to turn white, and add the sugar. Whisk until they leave a ribbon pattern on surface when whisk is lifted.
- Combine powdered sugar and almond meal and fold into meringue . Place into a pastry bag with wide round tip. Pipe small round the size of a quarter onto cookie sheet lined with parchment paper. Bake 10-12 minutes or until set but not browned. Repeat until all is used up. Cool.
- Filling: Combine chilled butter and almond paste until smooth. Stir in jam and sandwich two cookies together.
