    Rolled cookies, Hazelnut cookies

    • 1 C butter
    • 1 C sugar
    • 1 tsp vanilla
    • 1 1/2 C toasted, skinned and ground hazelnuts
    • 2 C cake flour


    Instructions


    1. Spread the nuts in a shallow pan and roast at 350 degrees for 7-10 minutes, or until golden and skins crack. Rub nuts while warm in a rough cloth. Grind in a food processor until very fine. Don't over process or you will have butter.

    2. Cream butter and sugar, add vanilla and nuts. Stir in the flour. Pat or roll out on a lightly floured surface until 1/8 of an inch thick. Cut into desired shapes. With a spatula, gently place on an ungreased cookie sheet. Bake 10 minutes. Cool completely on the cookie sheet because they are fragile and will break.
