Rolled cookies, Hazelnut cookies

- 1 C butter
- 1 C sugar
- 1 tsp vanilla
- 1 1/2 C toasted, skinned and ground hazelnuts
- 2 C cake flour
Instructions
- Spread the nuts in a shallow pan and roast at 350 degrees for 7-10 minutes, or until golden and skins crack. Rub nuts while warm in a rough cloth. Grind in a food processor until very fine. Don't over process or you will have butter.
- Cream butter and sugar, add vanilla and nuts. Stir in the flour. Pat or roll out on a lightly floured surface until 1/8 of an inch thick. Cut into desired shapes. With a spatula, gently place on an ungreased cookie sheet. Bake 10 minutes. Cool completely on the cookie sheet because they are fragile and will break.
