    Shortbread, Pistachio

    Recipe Introduction

    Preheat oven to 325 degrees F.

    List of Ingredients

    1 C butter, softened
    1/3 C granulated sugar
    1/3 C packed light brown sugar
    1 tsp vanilla extract
    1/4 tsp salt
    2 C all-purpose flour
    1/2 C chopped, toasted, pistachios

    Recipe

    Beat butter and sugars until light and fluffy, on high with electric mixer. (3 minutes). Beat in vanilla and salt. Reduce speed to low and add flour and nuts, mixing until just combined.
    Turn dough into an ungreased 13x9 inch baking pan. Spread evenly over bottom of pan. . Bake 50-55 minutes until golden brown and slightly darkened around edges.
    Let cool in pan for 5 minutes. Cut into 36 rectangles while in the pan. Cool completely before removing from pan.
    For a topping drizzle with white chocolate and optional lemon sugar.

    White Chocolate Drizzle:
    Melt 3 1/2 ounces white chocolate in a bowl set over very gently simmering water. Let cool slightly and transfer to a plastic baggie. Snip a tiny corner off. Drizzle side to side over short bread. Top with dried cranberries if desired.

    Lemon Sugar;
    Combine 1/2 C sugar and the finely grated rind of 2 lemons in a medium bowl. Work with your finger tips into the sugar until fragrant and yellow. Sprinkle over the short bread. while still warm.
