    POTATO CRACKERS

    MAKES ABOUT 36 CRACKERS

    List of Ingredients

    1 cup 100% wholewheat flour
    1 tsp salt
    1 1/8 cups rolled oats
    3/8 cup margarine
    1/2 cup mashed potatoes

    Recipe



    Heat oven to 325°.
    Flour a cookie sheet.
    Mix together the flour and salt and stir in the rolled oats. Rub in the margarine and knead in the mashed potato. Knead until firm and smooth. Roll out on a lightly floured surface to about 1/8-in thickness and cut into 3-in rounds with a cookie cutter. Place the rounds on the cookie sheet and bake for 15-20 minutes, until crisp but not brown. Transfer to a wire rack to cool.
    Serving suggestion
    These Crackers go well with cheese or soup.
