Spiced Whipped Cream

Makes about 4 Cups.
List of Ingredients
2 C heavy whipping cream
8 1/4 inch thick slices unpeeled fresh ginger
8 whole allspice berries
3 bay leaves
1 cinnamon stick
pinch salt
1 T brandy, dark rum or amaretto, etc....
3-4 T powdered sugarRecipe
Pour the cream into a medium saucepan over medium high heat. Add the ginger, allspice, bay leaves, cinnamon stick and salt. Bring to a boil, then cover and remove it from the heat to steep for 30 minutes. Strain the cream into a 2-4 cup glass bowl or measuring cup, add the alcohol if using and chill thoroughly, at least 4 hours or overnight.
Whip chilled cream. When it starts to thicken, add 3 t of the powdered sugar and whip until the cream holds soft peaks. taste for sweetness and adjust. Chill until ready to serve .
