Serves 6.
List of Ingredients
3 strips bacon, diced
3 medium onions, sliced
1 1/2 pounds cod fillets, in 2 1/2 inch pieces
1 1/2 pounds potatoes, cut in 3/4 inch cubes
1/4 C diced celery
3 large carrots, in 3/4 inch cubes
1/4 C diced bell pepper
4 tsp salt
1/4 tsp pepper
3 C boiling water
3 1/2 C canned tomatoes-(Number 2 1/2 can)
2 T minced parsley
Recipe
Saute bacon in deep kettle until lightly browned. Remove bacon and set aside. In same kettle, saute onion slices until transparent. Add fish and next 7 ingredients. simmer covered, until vegetables are tender, about 25 minutes. Add tomatoes, heat through. Garnish with parsley and bacon pieces.
