    Dansk Aeblekage-(Apple Coffee Cake)

    List of Ingredients

    * 1 cups milk,scalded
    * 1cake, compressed yeast
    * 4 cups flour or more
    * 1/3 cup butter
    * 1/3 cup honey
    * 1 tsp lemon zest
    * cinnamon and sugar
    * 2 tablespoons almonds, grated
    * 3 C sliced Apples


    Recipe

    Prepare dough, scald milk and add butter, honey and salt. When cool add yeast dissolved in 1/4 cup warm water. Add eggs and beat well . Add enough flour to make a soft dough. Turn out on floured board and knead. put into buttered bowl and let rise until doubled. Knead down again and let rise. until light. Roll out to 1/2 inch thick spread on baking pans or cookie sheets. Spread with butter.
    When well risen, peel apples, cut into 1/2-inch slices and arrange on dough. Sprinkle well with a mixture of sugar, cinnamon, and a pinch of nutmeg. Sprinkle with grated almonds.
    Bake 10 minutes in a preheated 400Fº oven. Lower heat to 375Fº and bake until a toothpick inserted in the center comes out clean.
    Cut in squares and serve either hot or cold with sweetened whipped cream.
    For a sweeter cake, sprinkle powdered sugar over the cake after it comes out of the oven.
