12 ounces (1-3/4 cups, unpacked) brown sugar
6 ounces (3/4 cup) white sugar
1-1/4 teaspoon salt
1 teaspoon vanilla
6 ounces (3/4 cup) vegetable oil
12 ounces (1-1/2 cups) buttermilk, divided use
11 ounces (2-3/4 cups) cake flour
1 tablespoon baking powder
1-1/2 teaspoons baking soda
3 large eggs
1/2 cup chopped macadamia nuts
» Glaze:
2/3 cup powdered sugar
1 tablespoon water
2 to 3 teaspoons maple syrup
Recipe
Preheat oven to 350 degrees. Grease and flour 2 8-inch round cake pans.
Combine sugars, salt and vanilla. Mix in oil and 1/2 the buttermilk.
Sift together flour, baking powder and baking soda. Add to sugar mixture. Add remaining buttermilk and eggs. Mix well (batter will be very thin). Pour into prepared pans. Bake about 40 minutes.
Cool cake, then drizzle with icing and sprinkle with chopped nuts.
