1/4 C 81% wheatmeal self rising flour
1 tsp baking powder
1 tsp mixed spice
pinch grated nutmeg
3/4 c wholewheat breadcrumbs
1 T brown sugar
5/8 C margarine, grated
a little milk to mix
3/4 C mixed dried fruits,
currants, raisins, white raisins
Recipe
Bring a large pan of water to a boil. Grease a pudding mold. Sift the flour, bakind powder and spices and add any bran remaining in the sieve. Stir in the breadcrumbs and sugar and rub in the margerine. Add just enough milk to mix to a soft dropping consistency. Stir in the dried fruits.
Turn into the bowl or basin, cover with greased foil. Tie securely and stand on a trivet in the pan of boiling water. Cover pan and steam 2 hours, topping up the water as necessary with boiling water. Turn out the pudding on to a heated serving dish. Serve hot
