3 oranges
1 quart strawberries
4 egg yolks
3 T sugarRecipe
Peel 2 oranges and cut into segments. Grate the zest and reserve. Squeeze 1/3 cup juice from last orange.
Combine orange segments, 1 tablespoon of the juice and hulled berries. Let stand.
Meanwhile, whisk egg yolks, sugar, 1 teaspoon zest and rest of juice until blended. Place the metal bowl over a pot of gently simmering water, over low heat.
Cook and whisk until foamy and it triples in volume, holds line of whisk and reads 170 degrees F. on thermometer(5-6 minutes). Remove from heat.
Divide fruit into dessert dishes. Spoon sabayon over and sprinkle with remaining zest. serve warm.
