Classic Hummus

1 clove garlic
1 15-oz can chickpeas
1/4 tsp salt
2 T lemon juice
2 T Tahini
olive oil
water
Recipe
Chop the garlic. Combine with the drained and rinsed chickpeas, salt, lemon, tahini, olive oil and water in a food processor and pulse until smooth, scraping the sides of the bowl as necessary. Season to taste with salt, olive oil or paprika, if desired. Refrigerate up to 7 days.
Artichoke;
add 3 cloves garlic and a drained 14 oz can marinated artichoke hearts.
Avocado;
Leave out the tahini and lemon juice. reduce olive oil to 1 Tablespoon and water to 1 tablespoon. Add 1 medium peeled and pitted avocado, 2 T lime juice, 2 T chopped red onion, 1 C loosley packed cilantro leaves, 1 T diced and seeded jalapano and an extra 1/4 tsp salt.
Cocoa;
leave out the tahini, garlic and lemon juice. Add 1 T honey, 4 T unsweetened cocoa powder,5 T sugar,3 T water and an extra 1/4 tsp salt.
Cucumber;
Leave out the water and add 1/2 peeled, seeded and chopped cucumber and 1/2 cup fresh dill. (1 T dried).
Horseradish;
Add 2 T jarred horseradish.
Lemon;
Leave out the tahini and olive oil use 3 T each water and lemon juice and an extra 1/2 tsp salt.
