Chicken Pine Nut Dumplings

List of Ingredients
Dumplings;
1/2 pound ground chicken
1/2 C minced water chestnut
1/2 C minced cilantro
1/3 C finely chopped pine nuts
1/3 C minced scallion
3 T dry sherry
2 T soy sauce
1 T minced ginger root
1 beaten egg
1/2 tsp black pepper
40 won ton wrappers, cut in 3 inch squares
no stick cooking spray
shredded Napa cabbage
Ginger chili sauce;
1/2 C seasoned rice vinegar
1/4 C soy sauce
1 T minced ginger root
1/4 tsp chili oilRecipe
Sprinkle baking sheet with flour. Mix first 10 ingredients. Place a generous teaspoon of the filling in center of wonton wrapper. Moisten wrapper with water. Bring all corners over filling. Press edges together and close completely. Repeat until all wrappers are used. (can be frozen at this point for up to 2 weeks).
Place steamer rack in a large pot with 1/2 inch of water below. Spray the rack with the oil. Bring water to a simmer. In batches, steam 12 minutes, side by side, not touching. (same time frozen). Arrange on Napa cabbage and serve with the sauce.
