1 C milk
1/3 C butter
1 C sifted flour
pinch salt
4 eggs, room temperature
Recipe
In a heavy pan, bring the milk to a boil with the butter. Add the flour all at once and stir quickly with a wooden spoon until smooth and it comes clean from the pan. remove from heat and cool 2 minutes. Add eggs one by one, beating well after each. When the paste no longer looks slippery, drop by 1/2 teaspoonful, (or use a pastry bag), onto greased baking sheet.
Bake in a preheated oven for 10 minutes. Add to soup just before serving.
