Cheddar-Rice Loaf

Recipe Introduction
Preheat oven to 350 degrees F.
List of Ingredients
1/4 C butter
1 C milk
2 C cooked rice
1 1/2 C grated cheddar
3 eggs, slightly beaten
1/4 C chopped celery
1/4 C minced onion
4 sprigs parsley, snipped
1/2 C chopped bell pepper
1 tsp salt
1/2 tsp mustard
Recipe
Melt the butter in the milk. Combine eggs, rice and cheese. Stir into the the milk. Add celery, onion, parsley, bell pepper and seasonings. Turn into a 8x4x2 loaf pan (Pyrex). Bake 1 hour and 15 minutes.
Mushroom sauce
Make a thin white sauce and add 8 oz sliced mushrooms, sauteed, and parsley as desired. Serve over the rice loaf. Serve with hot sauce if desired.
