Chicken upside down corn bread

Recipe Introduction
Preheat oven to 400 degrees F. Serves 9
List of Ingredients
- 3 T butter
- 2 T chopped onion
- 1/4 C chopped celey
- 3 T flour
- 1/2 tsp seasoned salt
- 1 C chicken broth
- 1- 2 1/4 ounce can ripe olives, sliced
- 2 C chicken pieces
- 1 C cornmeal
- 1 C flour
- 3 tsp baking powder
- 1 tsp salt
- 1/4 C sugar
- 1/4 C shortening
- 1 C milk
- 1 egg
Instructions
- Saute onion and celery in butter until limp. Add flour and blend. simmer 1 minute. Add salt and chicken broth. Cook over low heat, stirring until thickened and bubbly. Cover and set aside.
- In buttered 8 1/2 inch square baking pan, arrange olives, scatter chicken over. Spoon the sauce over.
- Make cornbread, combine dry ingredients thoroughly. cut in shortening. Combine milk and eggs, mix into dry ingredients just until blended. Pour over chicken in casserole dish. Bake 25 minutes.
