    Chicken upside down corn bread

    Recipe Introduction


    Preheat oven to 400 degrees F. Serves 9


    List of Ingredients


    • 3 T butter
    • 2 T chopped onion
    • 1/4 C chopped celey
    • 3 T flour
    • 1/2 tsp seasoned salt
    • 1 C chicken broth
    • 1- 2 1/4 ounce can ripe olives, sliced
    • 2 C chicken pieces
    • 1 C cornmeal
    • 1 C flour
    • 3 tsp baking powder
    • 1 tsp salt
    • 1/4 C sugar
    • 1/4 C shortening
    • 1 C milk
    • 1 egg


    Instructions


    1. Saute onion and celery in butter until limp. Add flour and blend. simmer 1 minute. Add salt and chicken broth. Cook over low heat, stirring until thickened and bubbly. Cover and set aside.
    2. In buttered 8 1/2 inch square baking pan, arrange olives, scatter chicken over. Spoon the sauce over.
    3. Make cornbread, combine dry ingredients thoroughly. cut in shortening. Combine milk and eggs, mix into dry ingredients just until blended. Pour over chicken in casserole dish. Bake 25 minutes.
