Farmers Casserole

List of Ingredients
1 tblsp olive oil
4 C potatoes, in 1/2 inch cube
3/4 C shredded monterey jack cheese
1 C diced cooked ham or Canadian bacon
1/4 C sliced green onions
1 jalapeno pepper, seeded, finely chopped
4 eggs, beaten, or 1 C egg substitute
1/2 C milk
1/4 tsp pepper
Recipe
Grease a 2 quart baking dish with olive oli. Arrange the potatoes evenly in the dish. Bake at 350 degrees for 10 minutes.
Stir the potatoes. Sprinkle with cheese, ham, green onions and jalapeno.
Mix the eggs, milk and pepper in a bowl. Pour over the potatoes. At this point, the casserole may be covered and stored in the fridge overnight.
Bake uncovered, at 350 degrees for 40-45 minutes or until the potatoes are tender.
Serve with fresh fruit.
