1/2 lb. rice
1 head cabbage
1 onion, chopped
1 tbsp. shortening
1 1/2, lb. ground pork
Salt and pepper to taste
1 egg
1 lg. can sauerkraut
1 qt tomatoes
Recipe
Place rice in hot water in bowl. Soak until soft; drain. Cook cabbage until soft and limp. Drain; cool. Separate cabbage leaves; set aside. Saute onion in shortening in skillet until transparent. Combine ground pork, seasoning and rice. Add egg, onion and pan drippings; mix well. Place mixture on cabbage leaves. Fold sides in; roll up to enclose filling. Alternate layers of sauerkraut and cabbage rolls in Dutch oven. Spread with tomatoes. Bring to boil. Cover. Cook over medium heat for 1 1/2 hours or until tender.
8-10 servings.
