    1 smoked boneless pork butt
    2 med. sweet potatoes, peeled, diced
    1/2 C chopped celery
    1 C bread crumbs
    1 tsp. salt
    1 1-lb. can apricot halves

    Recipe



    Cook roast in Dutch oven over low heat to render fat. Increase heat. Brown roast quickly in pan drippings. Remove from Dutch oven. Cool. Combine next 4 ingredients in bowl. Make slashes 2 inches deep and 2 inches apart in top of roast to form pockets. Fill pockets with potato mixture. Insert metal skewer in each end of roast. Return roast to Dutch oven. Drain apricots; reserve syrup. Pour syrup over roast. Cover. Bake at 325 degrees for 2 hours or until tender. Remove cover. Baste roast with pan drippings. Place apricot halves around roast. Ba e for 1/2 hour longer or until top is glazed. Remove skewers. Slice roast through stuffing. Arrange with apricot halves on serving platter. Serve with pan drippings.
