Mushroom Frittata

8 eggs
olive oil
salt
pepper
1 C thinly sliced crimini mushrooms
1 small onion, thinly sliced in rings
1 small bell pepper, thinly sliced in rings
freshly snipped rosemary to taste
1/2 C sliced mustard greens (or red dandelion leaves)
Recipe
Coat the pan with enough olive oil so that the eggs don't stick. Beat the eggs with 3 T olive oil, lay the onions in the pan to cover bottom, add bell peppers and cook on medium heat until just tender crisp. Add remaining ingredients and cook 2-3 minutes with a lid, with out stirring. Pour the eggs into the pan and cook on medium low heat until the center is set, about 18 minutes. Garnish with parsley or watercress if desired.
