List of Ingredients
1 C chopped clams, or 4 clam fritters, diced
1/4 of an onion, small dice
8 ****take mushrooms, sliced
3 stems Chinese broccoli, sliced
1 baby bok choy, sliced
1/4 of a bell pepper, diced
5-6 eggs,
3 T milk
6 T grated parmigiano-Reggiano cheese
salt and pepper to taste
Recipe
Beat the eggs with the milk, the cheese, and salt and pepper to taste. In an 8 inch fry pan saute the onion lightly with the mushrooms. Add clams, Chinese broccoli, bok choy and bell pepper. Immediately pour the egg mixture over, without stirring. Reduce heat to medium. Place a lid on the pan and cook until top is set.
