    1 T olive oil
    1 C strips bell pepper, 1/4 inch wide
    2 C vertically sliced red onions, 1/4 inch wide
    1/4 tsp kosher salt
    2 garlic cloves, minced
    2 C marinara sauce
    1 tsp smoked paprika
    4 large eggs
    2 C cooked brown rice
    1/4 C fresh baby basil leaves
    2 T crumbled feta cheese

    Recipe



    Heat a 10 inch skillet over medium heat. Add oil to pan and swirl to coat. Add bell peppers, onion and salt, stirring occasionally. Add garlic and cook 30 seconds. Stir in the sauce and paprika. Bring to a boil, reduce heat, cover and simmer 5 minutes. Form 4 indentations in sauce with the back of a spoon. Slip cracked eggs in. Cover and cook 6 minutes, or until eggs are done.
    Divide rice among 4 shallow bowls. Spoon egg mixture evenly over rice. Sprinkle with basil and cheese.
