List of Ingredients
2 T bacon fat
1/2 C corn
1/2 C chopped, green bell pepper
1 tsp chopped parsley
2 T pimiento, chopped
1/4 C thinly sliced onion
1/3 C chopped black olives
4-5 eggs
Recipe
In bacon fat, fry the corn for 2-3 minutes and add bell pepper, parsley, onion and pimiento. Cook until onion is just transparent. Add olives. Beat the eggs with a little milk and pour over mixturein pan. Scrape from the outsides of pan to center with a heatproof rubber spatula, piling the eggs in center until eggs are no longer runny. Toss with a metal spatula until creamy but not dry.
Serve accompanied by rice and refried beans.
Variation; Roll up in a tortilla for a breakfast burrito. Topped with cheese and sour cream.
