- 4 eggs
- 4 T milk
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/2 C watercress stems and leaves
- 2 T butter
- 1 C shredded cheddar cheese
Instructions
- Beat eggs until well blended, add milk, salt, pepper and watercress. Heat butter in pan. Pour in mixture.
- when eggs begin to cook, tilt pan, while lifting edges of cooked mixture, to allow liquid mixture to flow underneath. when almost done, add cheese, fold over and slide onto a warm platter.
