List of Ingredients
- 5 C chicken broth
- 1 C pearl barley, rinsed
- 4 new potatoes, cut into eigths
- 2 bay leave
- 1/2 tsp cumin
- 1 T olive oil
- 1 small onion, diced
- 1/2 C cooked lima beans
- 2 plum tomatoes, halved, seeded and diced
- salt and pepper totaste
- 1 C queso fresco
- 1 T flat leaf parsley
Instructions
- Bring to a boil the broth barley, potatoes, bay leaves and cumin. Simmer until the barley softens, 15 minutes.
- Meanwhile, in skillet, heat the oil. Add the onion and garlic and cook over medium-high until they begin to brown, 7 minutes.
- Add the limas, onion and garlic to the barley and simmer another 10 minutes. Add the tomatoes, season and simmer until the soup is piping hot, 2 minutes.
- Discard bay leaves. Serve hot with cheese and parsley as garnish.
