    List of Ingredients


    • 5 C chicken broth
    • 1 C pearl barley, rinsed
    • 4 new potatoes, cut into eigths
    • 2 bay leave
    • 1/2 tsp cumin
    • 1 T olive oil
    • 1 small onion, diced
    • 1/2 C cooked lima beans
    • 2 plum tomatoes, halved, seeded and diced
    • salt and pepper totaste
    • 1 C queso fresco
    • 1 T flat leaf parsley


    Instructions


    1. Bring to a boil the broth barley, potatoes, bay leaves and cumin. Simmer until the barley softens, 15 minutes.
    2. Meanwhile, in skillet, heat the oil. Add the onion and garlic and cook over medium-high until they begin to brown, 7 minutes.
    3. Add the limas, onion and garlic to the barley and simmer another 10 minutes. Add the tomatoes, season and simmer until the soup is piping hot, 2 minutes.
    4. Discard bay leaves. Serve hot with cheese and parsley as garnish.
