Black Bean Garnachas

Makes 4 servings (About 10oz each) | Prep Time: 10 Minutes, Cook Time: 15 Minutes
List of Ingredients
1 (15oz) can S&W Black Beans drained and rinsed
1 (14.5oz) can diced tomatoes with garlic & onion, undrained
2 cloves garlic, minced
1 to 2 teaspoons minced jalapeno pepper (optional)
1/2 teaspoon ground cumin
1 cup grilled chicken or turkey, cubed
4 (7in) flour tortillas
1/2 cup shredded sharp Cheddar cheese
Recipe
Combine drained beans, undrained tomatoes, garlic, jalapeño and cumin in skillet. Add cooked chicken. Cook 5 minutes.
Arrange tortillas in a single layer on grill over medium coals.
Spread about 3/4 cup bean mixture over each tortilla. Top with cheese.
Cook about 3 minutes or until bottom of tortilla browns and cheese melts.
Tips and Suggestions:
Garnish with shredded lettuce, avocado and salsa.
Cut in small wedges to use as an appetizer.
