Corn pudding, Peruvian (humitas)

Recipe Introduction
Preheat oven to 350 degrees F.
List of Ingredients
- 5 C corn kernels, divided
- 2 eggs
- 1/2 to 3/4 C milk
- 1 T butter
- 1 C chopped green onions
- 4 oz diced green chilies
- 2 large ripe tomatoes, seed and dice
- 2 tsp paprika
- 1/4 tsp cayenne pepper
- salt and pepper to taste
- 1/4 C grated parmesan cheese
Instructions
- Grese a 3 quart baking dish. Put 2 and one half cups of corn, eggs and milk in blender and puree until smooth. Set aside.
- Melt butter in a large skillet over medium heat. Add onion and green chiles, saute 5 minutes or until soft. Add tomatoes, paprika and one quarter teaspoon cayennepepper, and cook 8-10 minutes, Add corn mixture, the remaining 2 1/2 cups corn, salt and pepper to taste. Cook 2 minutes. Pour into baking dish and sprinkle with cheese.
