8-10 scallions
1 small head of Boston lettuce
4 T butter
2 pounds small fresh peas, shelled
1/2 tsp granulated sugar (opt)
salt
pepper
sprig of thyme
1/4 C water
Recipe
Trim loose outer leaves of lettuce.
Put butter, peas, onions and heart of lettuce in a small , heavy sauce pan over medium heat. Season with sugar, salt pepper and thyme. When butter is bubbling, add 1/4 C water.
Cover and reduce heat to a simmer and cook 5-10 minutes, until peas are tender and most of the liquid has been absorbed. Taste for seasoning. Remove lettuce and cut into 4 pieces and serve along side of the peas.
