    List of Ingredients


    • one quarter C oil
    • 1 and one half pounds lamb, in 2 inch cubes
    • 2 large onions, sliced
    • 2 large carrots, shredded
    • 4 tsp. ground cumin
    • one quarter tsp black pepper
    • one quarter tsp cayenne pepper
    • 2 C short grain rice
    • Salt to taste


    Instructions


    1. In heavy pot, heat the oil on high. add the lamb and brown thoroughly. reduce heat to medium. add onions and cook until caramalized. Add carrots and cook until brown. Add cumin, pepper and cayenne. cook 1 minute longer. add enough water to barely cover, bring to a boil and reduce heat to a slow simmer. Simmer, covered, stirring occasionally, about one and one half hours, until lamb is tender.

    2. Steam the rice in 2 C water and make it salty , cook following Package directions for the time. serve the plov over the rice.
