Roast Pig (Leitao Recheido Assado)

1 4-5 week old pig
3 large onions
2 C crumbled bread
3 sprigs parsley, chopped
3 T butter
2 tsp sage
3 hard-boiled eggs, chopped
1 herb bouquet
salt
pepper
Recipe
Rub pig well with seasonings (cavity). Add parsley, eggs and sage to a fry pan and fry in butter with the onions.
Stuff the pig with this combination, mixed with the above ingredients. Truss the pig.
Bake 2 1/2 hours in a moderate oven, basting frequently. Garnish with parsley.
Parboiled sweet potatoes may be added to the roaster the last 15 minutes, or until browned.
