    Rock Cod Casserole

    Recipe Introduction


    Serves 6
    Preheat oven to 450 degrees F.


    List of Ingredients


    • 3 pounds rock cod fillets
    • 1 eggplant, sliced
    • 1 T dried parsley
    • 1 C sliced mushrooms
    • 4 T oil
    • 4-5 scallions, chopped fine
    • 1/4 tsp pepper
    • 1 tsp salt
    • 1/4 tsp Italian herbs
    • 1 7-ounce can hot tomato sauce


    Instructions


    1. Marinate fish in French dressing to cover for 1 hour.
    2. Saute eggplant in oil. remove slices. Add parsley, mushrooms, onion and seasonings, and saute.
    3. Oil a 2 quart casserole, And alternate layers of sauteed seasonings, eggplant and fish. Top with tomato sauce that has been mixed with 1 can water.
    4. Bake in a 450 degree oven for 20 minutes. Serve with garlic bread.
