Rock Cod Casserole

Recipe Introduction
Serves 6
Preheat oven to 450 degrees F.
List of Ingredients
- 3 pounds rock cod fillets
- 1 eggplant, sliced
- 1 T dried parsley
- 1 C sliced mushrooms
- 4 T oil
- 4-5 scallions, chopped fine
- 1/4 tsp pepper
- 1 tsp salt
- 1/4 tsp Italian herbs
- 1 7-ounce can hot tomato sauce
Instructions
- Marinate fish in French dressing to cover for 1 hour.
- Saute eggplant in oil. remove slices. Add parsley, mushrooms, onion and seasonings, and saute.
- Oil a 2 quart casserole, And alternate layers of sauteed seasonings, eggplant and fish. Top with tomato sauce that has been mixed with 1 can water.
- Bake in a 450 degree oven for 20 minutes. Serve with garlic bread.
