List of Ingredients
- 2 and one half pounds of flank steak
- kosher or sea salt
- freshly ground black pepper
- 1 medium onion, sliced
- 3 T olive oil
- one half C. sofrito
- one quarter tsp. ground cumin
- 2, 8 ounce cans spanish style tomato sauce
- 1 and one half C. water
- 3 T, coarsely chopped pimento stuffed olives
- 2 bay leaves
- 4 stalks celery, sliced
- 3 thinly sliced carrots
Instructions
- Heat the oven to 350 degrees. Pound meat until it's one quarter inch thick. Season with salt and pepper.
- Heat the oil in a large heavy skillet over high heat and cook meat until well browned on both sides.
- drain the fat and add the sofrito, salt and the cumin and boil. Stir in tomato sauce, water, olives and bay leaves.
- bring to a boil. Cover the pan and bake in the oven 2 and one half hours, or until the meat pulls apart easily with a fork.
- Cool meat and shred. Add carrots and celery. Reheat at a simmer until carrots are tender. Add water as necessary.

Serve on rice.
