    Serve with rassolnik Soup.

    List of Ingredients




    4 pounds cherries
    1 C water
    2 C vinegar
    3 C sugar
    1/2 tsp ground nutmeg
    1/2 stick cinnamon
    1 tsp ground clove
    1 tsp ground allspice

    Recipe



    Pit the cherries. Cook any bruised or imperfect fruit for half an hour with the water, mash with a spoon and strain through a sieve and reserve. This is your syrup.
    Mix the syrup, vinegar, sugar, and spices. cook 1/2 hour. cool. Pour over the cherries in a crock jar. Let stand 3 days, stirring from time to time.
    Pour off the vinegar, boil it up and let cool. Pack cherries into jars. fill with the vinegar. Seal. Keep in cool place for 2 months before using.
