    1 head Chinese cabbage
    3 T salt
    3 lrg garlic cloves
    5 Scallions
    2 tsp red hot chili pepper
    1 tsp fresh ginger root, grated

    Recipe



    Remove outer leaves of cabbage and reserve them. Thinly slice remaining cabbage, Less the core. Mix well with 2 T of the salt. Let set 20-30 minutes.
    Peel and press the garlic. Cut the scallions to 1 inch lengths. Mince the chili peppers, place all 3 in a bowl and add the grated ginger root.
    Rinse reserved cabbage leaves under running water. Drain well. Cut into 1/2 inch strips.
    combine all including the 1 T salt and toss well to mix.
    Place in a large mason jar and fill to the top with water. Cover loosely and store in a cool place, several days, stirring from time to time.
    Cover tightly and chill. Serve hot or cold, or room temperature.
