    12 hard boiled eggs, peeled and chopped

    1/2 cup canned green chilies, drained of liquid

    1/2 cup grated Cheddar or Pepper Jack cheese (can use more).

    2 tablespoons sour cream, or just enough to moisten

    2 tablespoons chopped green onions, (garnish)

    2 teaspoons chopped cilantro, (garnish)

    Cayenne pepper to taste (start small- 1/8 teaspoon, add
    more to taste)

    A pinch of cayenne

    Recipe




    Combine all ingredients in a bowl and mix well. Let chill in the refrigerator for several hours so the flavors can meld. The spicy cheese, and cayenne pepper are toned down by the eggs and sour cream, so you get a really nice flavor if you add some of the hot ingredients. Garnish with green onions or cilantro and a little sprinkle of cayenne pepper.
