4 egg yolks
1/2 C sugar
3 T lemon juice
2 tsp grated lemon rindRecipe
Beat eggs with mixer on medium high until thick and lemon colored. Beat in gradually, the sugar. Beat in lemon juice and the lemon rind. Cook over hot water in a double boiler until thick , 5-8 minutes, stirring constantly. Cool.
