2 eggs
2 cups milk
1 teaspoon salt
2 tablespoons sugar
1 cup cake flour
1/2 C white flour
dash nutmeg
Recipe
Beat eggs slightly, add milk, salt, sugar, and nutmeg. Sift and very lightly add a little flour at a time, stirring gently. Keep mixture thin.
Let the batter rest for 30 minutes (or sit in fridge overnight).
Have skillet hot. Add butter to the pan and when almost brown put in quickly 2 tablespoons of mixture for each pancake, spread thin.
Once it is golden brown on one side, flip and cook the other.
Serve with butter, berries, fruit, or jam.
