Recipe Introduction
The cod are air dried until stiff and dried. Then soaking a large dried lofoten cod in water for 1 week in daily changes of water for 3-5 days in a solution of Birchwood ashes tied in a bag and boiled in water with slaked lime and cooled. This produces a lye (caustic). the fish are soaked in this. The fish is then soaked in fresh water for 7 days, changing the water every day. Then cooked.
List of Ingredients
3 pounds lutefisk
5 C rich milk
1 T butter
salt
pepperRecipe
Boil fish in salted water, but not too long or it will fall apart (about 5 minutes). Drain. Add rest of ingredients to the boiling point. Serve hot.
Baked;
Put the lutefisk in a non-corrosive baking dish and season with salt and pepper. Put in a preheated oven at 375 degrees F. for 25 to 30 minutes. The fish is done when it flakes easily with a fork. Do not overcook it or it will be a white Jell! It does not be brown.
Serve with Bacon,or pork drippings, white sauce, mustard sauce, or the all time favorite melted butter.
Or try the Norwegian attitude and go with melted goat cheese.
Serve on the side, steamed potatoes and tiny peas, also lots of lefse.
Do not serve on a silver platter.
