Salt Salmon Salad

List of Ingredients
4 hardboiled eggs
2 C cooked beets
1 C cooked, cubed potatoes
1/2 C chopped celery
2 C cooked carrots
2 T chopped onion
1/4 C cubed salt salmon, or herringRecipe
Soak the salmon in cold water 3-6 hours. Drain and rinse. dry with toweling. Combine all ingredients. Serve with dressing or mayonnaise.
Dressing;
Whip 1 cup of cream and season with the juice of pickled beets. On the smorgasbord, this is very colorful when served decorated with rows of chopped beets, carrots,, egg yolks, egg whites and parsley.
Salt Salmon;
Put a 1 1/2 lbs. salmon fillet (no more than about 1/2" thick) in a 9x13 glass dish and cover both sides with a thin layer of sea salt.
Cover with plastic wrap, and refrigerate for 3-4 days. This removes most of the moisture and cures the fish.
