Whole plant is edible, Above ground tastes of "pine sap".
root can be cooked or eaten raw (tough and bitter), roots can be candied. they are oily.
Roast the seeds like any sunflower, eat shell and all. grind into flour also. You can boil the raw seeds (bruise or lightly crush them), and skim the oil off the top to use in dressings and etc....Use seeds in granola or trail mix.
