Recipe Introduction
Canada snakeroot, Indian ginger, Vermont snakeroot.
Use sparingly. Can cause kidney failure and death.
Protected in some areas.
List of Ingredients
Root, dry and grind into a powder, or candy in 2 cups sugar to 1 cup water, leave in the syrup, or boil the syrup until thickened and dry the candied root. Roll in sugar.

Scrape the roots and cut into 1/3 inch diagonal slices to measure 2 cups. boil with 3 cups water for 1 hour or until the roots are tender. Stir in 2 cups sugar and continue to boil for 20-25 minutes. Bottle the syrup. Place the ginger to dry overnight. The next afternoon sprinkle the roots with coarse sugar. Dry for 1 more day. Use the roots in any recipe calling for ginger and the syrup to flavor wild fruits.
