P. Bistorta-almond flavored root.
P. Cuspidatum-[False Bamboo] young edible sprouts. Cook 3-4 minutes in boiling salted water. Toothsome acidity. Young stems also, carefully peel outer stems and cut in segments. The tips are faintly asparagus in taste at first bite, then a tartness similar in flavor to rhubarb with an okra aftertaste and"green" overtone to the finish. Good replacement for rhubarb. [I tried it steamed]
P. Alaskum- young shoots as rhubarb.
