    There are at least 85 differnt oaks.
    Acorn contains a certain amount of tannin. Low tanin-eat raw or roasted. Emory oaks in the sothwest and Mexico can be shelled and eaten as is. otherwise, White oaks, Burr, Oregon white and swamp oak are best to harvest for low tannin.
    High tannin-leach tannin. shell and grind into a meal. Black oaks are high in tannin.

    High tannin, Leach tannin. Suspend in a bag in running water, Knead occasionally, A full day process. Also can be placed in a tightly woven basket and pour boiling hot water over it, lots of it. shell and grind. Place in a slow oven to dry, but it will mold and get rancid in a few hours.
    Easier yet, shell nuts and boil whole in several changes of water. Change water every time it gets yellowish. Keep hot water at hand as this takes a couple of hours. Let dry and eat or grind.
    White oaks are sweeter than red oaks. Effective in blood sugar control.

    Pemmican
    1 pound meat
    1/2 C dried plums
    1/2 C acorn meal
    Cook meat in small pieces and dry. Grind all together. Serve on tortillas or flat bread.
