Lean bison, smoked, dried and pounded fine is known as beat meat.
20 pounds of hard fat and 20 pounds of soft fat are slowly melted together and poured on 50 pounds of beat meat, well mixed together and closely packed. Service berry is dried and as much as possible was mixed in. (or buffalo berry, kinnikkinnik, salal or other berries or nuts.)
