Squirrel Fricassee (or wild duck)

Prepare a herb flour,
1 C flour
1 T ground marjoram
1/2 tsp black pepper
1 T salt
1/2 tsp allspiceRecipe
Put the herb flour in a clean paper bag. Dredge the squirrels or duck by shaking in the bag. Reserve unused flour.
Heat 1 tablespoon fat and 1 tablespoon of butter.in a heavy fry pan or dutch oven.
Brown the meat all over. Pour off some of the fat and add 3/4 C sherry wine. Cover and simmer for an hour.
Make a sauce with the liquid in the pan, thickening it with some of the herb flour.
