Root, peel and slice, then boil or roast. If bitter, boil in 2 waters, or more. A central starchy core is the best part,requires less boiling.
Cooked root can be fried or roasted. Mash like potatoes if desired. Also dry the mush for flour. Edible raw.
Seeds, collect and roast, they will pop like popcorn, or parch them and add to cereal, or grind into flour.
Flower edible.
