12 Tacos. 6 servings.
Preheat oven to 350 degrees F.
List of Ingredients
- 1 (14.75) oz can Alaska salmon
- 1/2 C salsa
- 12, 6.5 inch, corn tortillas
- 3/4 C refried beans
- 1/4 C grated cheddar cheese
- 2 C cabbage or lettuce, shredded
- 3/4 C tomato, diced
- salsa to taste
- Cilantro to taste
Instructions
- Mix salmon and salsa, set aside.
- place tortillas on sheet pans in a single layer. Portion beans and cheeseevenly onto tortillas. Place in ovennuntil warm and cheese is melted, 5-8 minutes. Remove from oven and divide salmon mixture evenly among tortillas. Top with cabbage and tomatoes. Fold tortillas over and serve with extra salsa and chopped cilantro, if desired.
Final Comments
I tried not mixing the fish and salsa and liked it better. I also added a litle sour cream after the tomatoes. Also have experimented with mexican cheese, very good.
