Asparagus with sole

List of Ingredients
- 1 pound asparagus
- 1 pound sole fillets (4 pieces)
- 1/4 tsp salt
- 1/3 tsp grated lemon peel
- 4 T squeezed lemon juice
- 1/8 tsp black pepper
- 1 T chives, finely chopped
- 1 tsp mildly flavored mustard
Instructions
- Cut asparagus in 3 inch lengths. cook in 2 quart saucepan for 5 minutes, drain. Set aside. Season the skin side of the fillets with salt and lemon peel.
- Place asparagus spears at one end of each fillet. Roll up fillets with asparagus spears inside and secure with round toothpicks.
- Place in a 2quart casserole dish liberally sprayed with non-stick cooking spray.
- Bake at 400 degrees F. about15-20 minutes or until fish flaked easily. Baste fish every 7 minutes.
