Baked Fish Cotija

4 red snapper fillet
salt and pepper, to taste
1 8-oz can tomato sauce
3/4 C cotija cheese, crumbled
2 tblsp butter
1 tsp oregano leavesRecipe
Butter a shallow casserole dish liberally with 1 tablespoons of butter. Place 2 snapper fillets in casserole dish. Season with salt and pepper. Spread 1/2 of the tomato sauce over, and sprinkle 1/2 of the cheese on. Place 2 more fillets on top, Cut the remaining butter in 1/2 and place 1 on each fillet. Top with remaining tomato sauce and another layer of cheese. Bake, uncovered, at 425 degrees for 15-20 minutes, until the fish flakes easily.
