    Serves 8.

    List of Ingredients




    8 fillet of red snapper
    2 C crab meat
    2 C small shrimp
    5 T butter
    5 T flour
    1 C hot milk
    1 C hot fish stock
    2 egg yolks beaten
    4 T heavy cream
    4 T white wine
    salt to taste
    paprika

    Recipe



    Melt butter and stir in the flour off of the fire. Cook until lightly browned. Stir milk and stock in gradually. Cook until thickened. Cover and cook over low heat 25 minutes, stirring occasionally. Add egg yolks and cream, then stir in wine, slat and paprika.
    Place each fillet in center of large square of foil. Heap1/4 C crab on each and 1/4 cup shrimp on that. Divide sauce between the 8 fillets and seal foil. Place in preheated 375 degree oven about 30 minutes.
