    Creole Style Shrimp with Rice

    List of Ingredients




    1 pound large shrimp
    4 C water
    3 T lemon juice
    1 T salt
    3-4 sprigs fresh parsley
    1 clove garlic split
    1 bay leaf
    celery leaves
    1/4 C salted butter
    1 C diced celery
    2/3 C scallions, chopped
    1/2 C finely chopped bell pepper
    1 16oz can tomato paste
    3 tablespoons chopped fresh parsley
    Lemon wedges, for serving (optional)

    Cook shrimp 5 minutes in the ingredients down to and including celery leaves. Chill in cold water to stop cooking. Peel and set aside

    Heat the butter, olive oil and garlic in a large skillet over medium-high heat until fragrant, about 1 minute. Add the diced celery, scallion, and bell pepper. Season with salt and pepper.

    Add the water, tomato paste parsley and 4-5 drops Tabasco. Pour into a 2 quart casserole, add shrimp and bake at 350 degrees F. for 30 minutes

    Serve on rice.
